Would Minecraft run smoothly on my computer?

Everything:
Dell Studio 1537
It meets all recommended requirements, but I'm confused on this.

It needs a 2.5GHz SINGLE core. I have a 2.0GHz Dual Core.

My question is, would that be even better than the recommended requirements?

Recommended:
OS: Windows XP/Vista/7
OpenGL: 2.0
Processor: 2.5 MHz (Single Core)
RAM: 2 GB(XP), 3 GB(Vista/7)
Hard Drive: 256 MB Free
Video: 128MB RAM

It would play, you have an i-5 Sandybridge processor with the 1537 providing that laptop uses the onboard video rendering you should be okay. Would be better with discrete graphics but for a laptop you should be fine.

Minecraft is a single threaded application, it can only run on one core anyway, it doesn't benefit directly from additional cores. You don't say what sort of processor you have, if it's a 2GHz Pentium D it will struggle, if it's a more modern Core i3 it will be fine. Although it can only use one core the game will indirectly benefit from your dual core processor, the second core can take care of maintaining Windows instead of one core running both Windows and Minecraft.

I highly recommend you to play the free version to see for yourself if you can run it:

http://www.minecraft.net/classic/play

It might be out-dated, but it at least lets you play the game to see if you are having any problems. Minecraft is using JAVA as their main engine which can be pretty heavy on anyone's system. I hope your system would be enough to play it. If you can't, change the video options in the menu to alter the distance view.
